Blue Cheese Portobello Mushrooms Recipe

The recipe of the week is Blue Cheese Portobello Mushrooms. I love blue cheese, and my favourite thing is to mix it with absolutely anything. I created this when I had blue cheese that needed to be used since our fridge had been off for a while and mushrooms that we're on their way out. Abracadabra! I put them together and was pleasantly surprised with the outcome!

Portobello mushrooms (caps, baby's, slices)
3-4 tbsp olive oil
Salt & pepper
3-6 tbsp Blue cheese (depending how strong a flavour you like)
Foil or grill basket

Cooking Instructions
Wash the mushrooms and dry them. On a piece of foil or plate, pour or brush the olive oil over the mushrooms (I usualy use baby portobellos for this but you can use any shape or size) until they are coated. Sprinkle with salt and pepper and fold them up in the foil or place them in the grill basket. Put them on the BBQ or in the oven for 10-20 minutes or until done (they will be smaller and darker in colour). When they're done sprinkle the blue cheese on them and wait 5-10 minutes until it gets melty, and enjoy!
