Preparation Time: 10 mins
1/2 Red Onion
Fresh Cilantro or Ground Coriander
I really enjoy guacamole with diced tomatoes and onions, so I cut the tomato in quarters and scoop out the middle of it (the seeds) and then I dice them very small. Then I dice up some red onion very small, and put those aside. Then I cut the avocados in half, take the pit out and put nicks in the skin with a knife and peel the skin of the avocado off and put the avocados in a bowl. If the avocados aren't super soft I will first chop them up a bit with a knife and then mash them with a fork until its as mashed as you'd like it (if they're mushy enough you can just mash them up). Then you can add the tomatoes and onion. Then cut half a lime into thirds and squeeze it in and mix it all together. Then add salt and cayenne pepper to your liking, depending on how salty or spicy you like it. Then enjoy with corn chips or on a quesadilla or just with a fork!
